Instructions

    Combine rolled oats, plain flour, brown sugar, desiccated coconut, and salt in a large mixing bowl.

    Dissolve the bicarbonate of soda in boiling water in a small cup until frothy.

    Pour the soda mixture into the warm melted butter mixture, stirring as it foams up.

    Pour the warm liquid into the dry ingredients and stir with a wooden spoon until sticky.

    Roll rounded tablespoons of mixture into balls and place 5 cm apart on prepared trays.
