Instructions

Heat the fan oven to 180°C.

Score (cut shallow lines across) the duck skin in a fine diamond pattern, avoiding the underlying meat.

Season both sides of the duck breasts with fine sea salt and cracked black pepper.

Place the breasts skin-side down in a cold frying pan over low-medium heat on the hob.

Cook gently for eight to ten minutes until the fat renders (melts out) and the skin is deeply crisp and golden.

Turn the duck over and sear the flesh side for one minute to seal.

Transfer the duck skin-side up onto a baking tray and roast in the oven for eight minutes.

Remove the duck, cover loosely with foil, and rest on a warm board for ten minutes.

Pour away all but one tablespoon of duck fat from the pan, then fry the shallots until soft.

Pour in the red wine, scraping up browned bits, and simmer until reduced by half.

Add the stock, cherries, redcurrant jelly, and thyme, then simmer for five minutes until glossy.

Whisk in the cold butter off the heat, slice the duck thickly, and spoon the sauce over.

Always start duck breasts in a cold pan so the thick subcutaneous fat renders slowly before the skin browns. Do not slice the meat immediately after roasting, as resting allows the juices to redistribute evenly.

Keep leftover sliced duck and cherry sauce in separate airtight containers in the fridge for up to two days.
