Instructions

Soak the plank in water for at least 2 hours, weighted down.

Season the salmon and spread with butter, dill and a brush of maple syrup.

Heat the barbecue to medium and set the wet plank on the grate until it crackles and smokes.

Lay the salmon skin down on the plank and cover with lemon slices.

Close the lid and cook 20-25 minutes until the thickest part is just opaque.

Serve straight from the plank.

Keep a spray bottle nearby โ if the plank flames rather than smoulders, mist it down.
