Bring a very large pot of heavily salted water to a hard boil with the bay and peppercorns.

Lower the crabs in head first and return quickly to the boil.

Boil for 15-18 minutes depending on size.

Lift out and plunge briefly into cold water to stop the cooking.

Clean the crabs: remove the carapace, discard the gills and rinse.

Crack the legs and serve warm with lemon butter.
