Instructions

    Simmer the mustard greens and spinach with the ginger, chillies and 300 ml water, covered, for 45 minutes.

    Mash or briefly blend to a coarse purée — it should not be smooth.

    Sprinkle in the maize flour and cook a further 25 minutes, stirring, until thick.

    In a separate pan fry the onion and garlic in half the butter until deep gold.

    Stir the tempering into the greens and season.

    Finish with the remaining butter melting on top.
