Instructions

Mix the salmon, mash, spring onion, dill, egg, lemon zest, salt and pepper.

Shape into eight cakes and chill 20 minutes to firm up.

Press each into breadcrumbs on both sides.

Fry in butter over medium heat 4 minutes a side until golden.

Drain briefly on paper.

Serve with lemon and dill mayonnaise.

Chill before frying or they will slump in the pan.
