Mix all the marinade ingredients, holding back half the honey for glazing.

Coat the pork strips and marinate overnight in the fridge.

Set the pork on a rack over a tray of water and roast at 200C for 25 minutes.

Turn, brush with the reserved honey mixture and roast 15 minutes more.

Glaze again and finish under a hot grill for 3-5 minutes until the edges char.

Rest 10 minutes and slice across the strips.
