Instructions

    Simmer the milk over medium heat until it reduces to two-thirds of its volume. Stir constantly so it does not stick.

    Melt the jaggery (unrefined sugar) separately. Stir it into the milk once the milk cools slightly.

    Let the milk cool until lukewarm. Whisk in the yogurt starter until completely smooth.

    Pour into clay pots and cover. Keep in a warm place for 6-8 hours to set.

    Chill in the fridge for at least 4 hours before serving.
