Season the chicken well. Brown it in the oil in batches, then set it aside.

Whisk the flour into the hot oil over medium heat. Stir constantly 15–20 minutes to make a copper-penny roux (browned flour paste).

Add the onion, bell pepper, and celery. Cook 8 minutes to stop the roux from darkening further.

Stir in the garlic. Add the warm stock a ladle at a time, whisking until smooth.

Return the chicken with the bay leaves and Cajun seasoning. Cover and simmer 45 minutes until tender.
