Instructions

Toast coriander seeds and dried red chillies in a dry pan. Crush them coarsely.

Heat ghee (clarified butter) in a kadhai (deep curved pan). Fry onion chunks until slightly soft but still firm.

Add ginger-garlic paste. Cook until fragrant.

Stir in tomato puree and the crushed spices. Cook until the oil separates.

Add capsicum (bell pepper) chunks. Stir-fry for 2 minutes so they keep a slight crunch.

Gently fold in paneer cubes. Simmer for 5 minutes.

Season with salt. Top with ginger cut into thin matchsticks and serve hot.
