Instructions

    Roll each portion tightly into a thick cylinder, roughly 5 cm in diameter.

    Wrap securely in the paper, then wrap tightly in foil, twisting ends to seal.

    Place the wrapped puddings into a wide saucepan and cover completely with cold water.

    Bring to a gentle simmer over low hob heat and cook for 45 minutes.

    Lift out the puddings and allow them to cool completely in the fridge.

    Unwrap the cold pudding and cut into 1.5 cm thick rounds with a sharp knife.

    Melt lard in a frying pan over medium heat on the hob.
