Instructions

    Toast the moong dal in a dry pot until it smells fragrant. Rinse the rice and dal together.

    Pour 6 cups of water into the pot. Cook until soft and mushy, mashing gently with a ladle.

    Add salt. Stir in a little hot water until it becomes soft and porridge-like.

    Heat ghee (clarified butter) in a small pan. Fry the cashew nuts until golden.

    Add cumin seeds, crushed black pepper, ginger, curry leaves and asafoetida. Fry gently until aromatic.

    Pour the hot spiced ghee mixture over the cooked rice and dal.

    Stir everything thoroughly. Simmer gently for a couple of minutes to combine the flavours.

    Serve hot with an extra drizzle of ghee on top.

Chef's tips

Ven pongal should be soft and slightly loose, not stiff, so keep extra hot water ready to adjust the texture. Freshly cracked pepper gives a much better aroma than pre-ground pepper.

Refrigerate for up to 2 days; texture will thicken on cooling.
