Instructions

Grind the grated coconut, dried red chillies and coriander seeds with a little water until smooth.

Heat the sesame oil in a clay pot. Add the fenugreek seeds and let them pop.

Add the curry leaves and shallots. Fry them until they turn golden.

Add the chopped tomato. Cook until it turns soft and mushy.

Stir in the turmeric powder and the ground coconut-chilli paste. Fry for 2–3 minutes.

Pour in the tamarind extract and 2 cups of water. Add the salt.

Bring the gravy to a bubbling boil. Simmer gently for 10 minutes.

Gently slide in the fish pieces. Simmer for another 10–12 minutes without stirring too much.

Turn off the heat. Let the curry rest for at least 20 minutes before serving.
Chef's tips
Resting the curry helps the flavours deepen, especially after an hour. Use a clay pot if possible, as it gives the gravy an earthy taste.
