Stir the grated coconut constantly in a dry heavy pan over low heat. Roast until dark reddish-brown, about 12-15 minutes.

Add coriander seeds and dried red chillies during the last few minutes. Toast them lightly with the coconut.

Let the roasted mixture cool. Grind it with half the shallots and a little water into a smooth, dark paste.

Coat the prawns with turmeric and a pinch of salt. Set them aside while you prepare the masala (spice mix).

Heat 1 tablespoon coconut oil in a clay pot and pop the mustard and fenugreek seeds. Fry the remaining sliced shallots and curry leaves until golden.

Pour in the ground roasted coconut paste. Cook on low heat for 5-6 minutes until the raw smell goes and oil separates.

Stir in the tamarind pulp and enough water to make a medium-thick curry. Bring it to a gentle boil.

Add the marinated prawns. Simmer gently for 8-10 minutes until the prawns turn firm and pink and the curry thickens.

Check and adjust the salt. Drizzle the remaining coconut oil on top, simmer for 2 minutes, then remove from the heat.

Let the curry rest for 15 minutes before serving so the flavours deepen.
Chef's tips
Roast the coconut slowly and patiently over low heat. Rushing this step stops the curry from developing its signature dark colour and rich nutty flavour. Fresh small prawns work best because they cook quickly without turning rubbery.
