Heat sesame oil in a pot. Add mustard seeds and fenugreek seeds until they pop and sizzle.

Add curry leaves and shallots. Fry until the shallots turn soft and see-through.

Add the chopped tomato. Cook until it becomes soft and mushy.

Stir in the turmeric and sambar powder. Cook briefly until you smell the fragrant spices.

Pour in the tamarind extract and 2 cups of water.

Add the salt and jaggery (unrefined sugar). Bring the liquid to a boil.

Lower the heat. Simmer gently for 15โ20 minutes until the kuzhambu (tangy gravy) thickens and oil floats on top.

Toasting the sambar powder briefly in the pan deepens its flavour. Let the kuzhambu rest for an hour before serving to make the taste even better.
