Instructions

    Heat sesame oil generously in a kadai (deep pan). Fry the sun-dried vathal (dried berries) until slightly puffed, then remove and set aside.

    In the same oil, add mustard seeds and fenugreek seeds until they pop and sizzle.

    Add crushed garlic if using, along with curry leaves. Fry gently until the garlic turns golden.

    Add sambar powder and turmeric. Stir quickly so the spices do not burn.

    Pour in the tamarind extract, salt, and jaggery. Bring the liquid to a boil.

    Simmer on low heat for 15-20 minutes. Cook until the raw tamarind smell disappears and the gravy thickens.

    Add the fried vathal back into the kuzhambu (tangy gravy). Simmer for a further 5 minutes.

    Let the curry rest for a few hours or overnight before serving for the best flavour.

Chef's tips

Vatha kuzhambu is traditionally made in bulk and stored, as its flavour improves over several days at room temperature or refrigeration. Use generous oil, as it is meant to float on top and preserve the curry.
