Instructions

Dry roast the fenugreek seeds until deep brown and aromatic. Grind them into a fine powder.

Heat sesame oil in a clay pot. Add mustard seeds and curry leaves until they pop and crackle.

Add the pearl onions. Fry until they turn see-through and lightly golden.

Add the chopped tomato. Cook until it turns soft and pulpy.

Stir in the sambar powder and turmeric. Cook for a minute until fragrant.

Pour in the tamarind extract, salt and jaggery (unrefined cane sugar). Bring the mixture to a boil.

Simmer gently for 15 minutes. Stir in the roasted fenugreek powder and simmer for 5 more minutes until thick.

Let the kuzhambu (tangy tamarind curry) rest for a while before serving so the fenugreek bitterness mellows.
Chef's tips
Toast the fenugreek seeds slowly on low heat because burnt fenugreek becomes very bitter. For the best flavour, let this curry rest overnight before eating.
