Instructions

Preheat your fan oven to 200ยฐC (gas mark 7).

Line a large baking tray with baking parchment.

Mix the mincemeat, diced apple, orange zest, mixed spice, and brandy together in a small bowl.

Unroll the puff pastry onto a lightly floured surface into a 30cm square.

Cut the square of pastry into six equal rectangles, then cut each rectangle diagonally into two triangles.

Spoon one heaped tablespoon of filling onto the centre of six triangles, leaving a clear 1cm border.

Brush the edges of each filled triangle lightly with beaten egg.

Place the remaining six pastry triangles over the filling and press the edges firmly to seal.

Crimp (fold and pinch the pastry edge into a decorative rope) all around to lock in the filling.

Cut three small slashes into the top of each Godcake to let steam escape.

Brush the tops with beaten egg and sprinkle generously with demerara sugar.

Bake for 18 to 20 minutes until puffed, crisp, and deep golden brown, then cool on a wire rack.
Chef's tips
Ensure the puff pastry remains chilled until ready to assemble so it rises into crisp layers. Do not overfill the pastry triangles, or the filling will boil out and scorch on the baking tray.
