Twist off the large claws and small legs from each crab and set them aside on a clean board.

Push your thumbs firmly upwards against the tail flap to lever the central body away from the main shell.

Pull off and discard the grey feathery gills, known as dead man's fingers, along with the small stomach sac.

Scoop all the soft brown meat out of the shell into a mixing bowl.

Scrub the empty top shells thoroughly in hot soapy water, rinse completely, and dry with kitchen paper.

Trim the rough edges of the cleaned shells using strong kitchen scissors to create neat serving bowls.

Crack the claws with a rolling pin and pick all sweet white meat from the claws and legs into a bowl.

Pick remaining white meat from the central cartilage using a crab pick or skewer, checking carefully for stray shell.

Mix the brown crab meat with breadcrumbs, melted butter, mustard, cayenne pepper, and a pinch of salt.

Gently season the white meat with half the lemon juice, white pepper, and a small pinch of salt.

Spoon the brown meat mixture down the centre of each shell, flanking both sides with fluffy white crab meat.
