Chef's tips
Bramley apples cook down to a luscious, soft texture that pairs best with the crisp oats. If the oat topping colours too quickly before the apples soften, tent a piece of foil loosely over the dish for the final 10 minutes.
Ingredient substitutions
- Bramley cooking apples โ tart eating apples like Granny Smith, reducing the brown sugar by one tablespoon
- rolled porridge oats โ gluten-free rolled oats
- soft light brown sugar โ Demerara sugar or caster sugar
Storage
Store leftovers covered in the refrigerator for up to three days.
Reheating
Reheat in an oven at 170C for 15 minutes until piping hot, or warm individual portions in the microwave.
Common mistakes to avoid
- โขSlicing the apples too thickly so they do not cook through in time
- โขBurning the oats in the frying pan before assembling the pudding
- โขOmitting the splash of water which helps the base layer of apples steam and soften
