Instructions

Rinse the smoked meat briefly. Put it in a heavy pot with water.

Bring to a boil. Simmer for 20 minutes to soften the meat and flavour the broth.

Add the sliced onion, ginger, garlic and whole green chillies to the pot.

Simmer for another 10 minutes until the meat is nearly tender.

Add the sliced fermented bamboo shoot. Simmer for 5 minutes.

Stir in the chopped greens. Cook for about 5 minutes until wilted and tender.

Season with salt to taste. Keep the broth light rather than heavily spiced.

Ladle hot into bowls and serve.
