Add the eggs, egg yolk, and lukewarm milk into the well.

Whisk the wet ingredients with a fork, gradually incorporating flour from the inner walls.

Knead firmly by hand for eight to ten minutes until the dough feels elastic and cohesive.

Wrap the dough tightly in cling film and rest for thirty minutes at room temperature.

Roll the dough out evenly with a rolling pin to a thickness of two millimetres.

Cut the sheet into irregular triangles and diamonds roughly four centimetres across using a pastry wheel.

Melt the butter with the sage in a wide skillet until foaming and hazelnut brown.

Cook the pasta in plenty of salted boiling water for three to four minutes until al dente.
