Lay the prepared mantis shrimp across the onions, then cover completely with the remaining warm onion marinade.

Always trim the sharp spiny edges along both sides of the mantis shrimp so guests can open them cleanly without injury. The dish must rest for at least twenty-four to forty-eight hours in the refrigerator so the delicate crustacean meat absorbs the sweet-sour marinade.
