Fill a large pot with cold water, add the lemon juice, and bring to the boil.

Trim the tough strings from the cardoons, then cut the ribs into 5 cm batons.

Drop the cardoons into the boiling acidulated water and simmer for 25 minutes until tender.

Drain the cardoon batons thoroughly and pat them dry with a clean tea towel.

Melt the butter in a saucepan over medium heat, stir in the flour, and cook for 1 minute.

Whisk in the warm milk gradually to prevent lumps, cooking until the béchamel thickens.

Season the sauce with half the salt, the black pepper, and a pinch of ground nutmeg.

Butter a baking dish and spread a thin layer of warm béchamel over the base.
