Castraure in Tegame

Instructions

Fill a large bowl with cold water and squeeze in the lemon juice.

Snap off the tougher outer dark leaves of each artichoke until pale tender leaves appear.

Trim the stem down to two centimetres and pare away the dark outer skin with a paring knife.

Slice off the top centimetre of prickly leaf tips, then cut each artichoke in half lengthwise.

Drop the prepared artichokes immediately into the lemon water to prevent discolouration.

Warm the extra virgin olive oil and crushed garlic in a heavy pan over medium-low heat.

Cook gently for two minutes until the garlic is fragrant but not browned.

Drain the artichokes and place them cut-side down into the hot oil in a single layer.

Pour in the white wine and let it bubble away for one minute.

Add the water, salt, and pepper, then cover with a tight-fitting lid and lower the heat.

Simmer for ten to twelve minutes until the artichoke hearts are completely tender when pierced with a knife.

Remove the lid, scatter with chopped fresh parsley, and toss gently before taking off the heat.
Chef's tips
True castraure have no internal prickly choke, so you do not need to scoop the centre. Keep the heat gentle so the artichokes braise in their own juices rather than fry dry.
