    Dissolve the salt in the remaining 40 ml of water and knead it thoroughly into the dough.

    Turn the dough onto a work surface and work it for 10 minutes until smooth and elastic.

    Place the dough in an oiled bowl, cover, and let it rise in a warm spot for 4 to 5 hours until doubled.

    Gently shape the risen dough into a taut, large round loaf and dust generously with semolina.

    Rest the round loaf seam-side up in a linen-lined basket for 2 hours until puffy.

    Preheat the oven and baking stone or Dutch oven to 240 degrees C.

    Invert the loaf onto parchment, slash a cross or circle on top with a blade, and bake with steam for 20 minutes.

    Reduce the heat to 200 degrees C and bake for another 25 to 30 minutes until the crust is dark golden and the base sounds hollow when tapped.

Durum semolina absorbs water slowly, so do not rush the initial mixing. A baking stone or heavy lidded cast-iron pot mimics the radiant heat of traditional Sardinian wood-fired brick ovens.
