Trim tough outer leaves from the artichokes, scoop out fuzzy chokes, slice into wedges, and place in water with lemon juice.

Cut the lamb lungs, heart, and liver into separate bite-sized pieces, keeping each organ type in its own separate pile.

Cook each type of organ meat strictly in order of density to avoid rubbery lungs or overcooked, chalky liver. Romanesco artichokes are ideal because they lack a heavy inner choke, but standard globe artichokes work if carefully cleaned.
