Instructions

    Set up a bain-marie by placing the bowl over a saucepan of gently simmering water.

    Add the butter cubes and stir continuously in one direction with a wooden spoon or whisk.

    Heat gently until the cheese softens and fuses completely with the milk into a thick stringy paste.
