Instructions

Peel, core, and cut the apples into thin slices about 3 mm thick.

Whisk the eggs, flour, milk, caster sugar, and salt together until completely smooth.

Stir the grappa into the batter if using.

Melt 20 g of the butter in the frying pan over medium heat.

Add the apple slices and fry for 5 minutes until tender and lightly golden.

Pour the batter evenly over the warm apples in the pan.

Lower the heat, cover with a lid, and cook for 8 minutes until the base is set.

Slide the omelette onto a flat plate or lid.

Melt the remaining 15 g of butter in the pan and invert the omelette back in.
