    Bring a large pot of well-salted water to a steady rolling boil over medium-high heat.

    Add the diced carrots and boil for 5 to 6 minutes until tender yet firm.

    Boil the peas for 3 minutes until bright green and tender, then drain and cool.

    Gently fold the diced eggs, gherkins and rinsed capers into the seasoned vegetables.
