    Bring the white wine vinegar and water to a rolling boil in a wide pot.

    Submerge the aubergine strips in the boiling vinegar mixture and cook for exactly two minutes.

    Lift out the aubergines, drain thoroughly, and press again in a clean cloth until completely dry.

    Pack the dried aubergines into sterilised glass jars, layering with sliced garlic, chilli, and dried oregano.
