    Place the whole musetto in a large pot and cover completely with cold, unsalted water.

    Do not prick the skin under any circumstances, or the sausage will dry out and burst.

    Bring the pot to a gentle boil over medium heat, then reduce to a low simmer.

    Cover partially and simmer very gently for two and a half to three hours until completely tender.

    Forty-five minutes before serving, bring 1.2 litres of water and coarse sea salt to a rolling boil in a heavy pot.

    Rain the cornmeal into the boiling water in a steady stream while whisking continuously to prevent lumps.

    Switch to a wooden spoon and cook the polenta over low heat, stirring frequently for forty minutes until thick and smooth.

    Carefully lift the hot musetto out of the cooking broth using tongs and rest on a board for two minutes.

    Peel away the outer casing if desired and slice the sausage thickly into one-centimetre rounds.

Chef's tips

Never pierce the casing of the musetto before or during cooking. Pricking allows the gelatinous juices and fat to seep into the water, leaving the meat dry rather than unctuously tender. The cooking water should only gently shudder, never boil vigorously.
