Whisk the dark rye flour, white bread flour, salt and fennel seeds together in a large bowl.

Turn the dough onto a lightly floured surface and knead gently for five minutes until slightly smoother.

Shape the dough into a tight round loaf using lightly floured hands.

Place the loaf onto a baking sheet lined with baking parchment.

Cover loosely with a damp linen towel and leave to prove in a warm place for ninety minutes.
