Bring water and fine sea salt to a boil in a heavy saucepan over medium-high heat.

Gradually pour in the white polenta while whisking continuously to prevent lumps from forming.

Reduce heat to very low and cook, stirring frequently with a wooden spoon for 40 minutes.

Rinse the fresh shrimp thoroughly in cold water and drain well in a colander.

Heat extra virgin olive oil in a wide frying pan over medium heat with the crushed garlic.

Add the shrimp once the garlic becomes fragrant and sautรฉ gently for two to three minutes.

Discard the garlic cloves, then stir in lemon juice, chopped parsley, and black pepper.

Spoon a generous ladle of soft, warm white polenta into shallow serving bowls.

Top each portion immediately with the warm shrimp and their pan juices.

If using true tiny schie, keep the delicate shells intact as they soften upon cooking and add authentic flavour. Keep the white polenta soft and pourable rather than stiff so it cushions the shrimp.

- white polenta flour โ fine yellow bramata polenta, though the colour contrast will differ
Storage
Store leftover polenta and shrimp separately in airtight containers in the refrigerator for up to one day.

Loosen the polenta with a splash of boiling water over low heat, and warm the shrimp gently for one minute in a frying pan.
