Whisk the egg yolks, milk, melted butter, grappa, and salt together in a large bowl until smooth.

Whisk in the flour gradually until you have a thick, lump-free batter.

Beat the egg whites in a separate clean bowl until stiff peaks form.

Fold the beaten egg whites gently into the batter using a spatula until fully incorporated.

Heat 2 to 3 cm of oil in a deep frying pan to 175 degrees C.

Pour a ladle of batter through a funnel into the hot oil, moving in a continuous spiral from the outside inward.

Fry for about 2 minutes until the underside is golden and crisp.

Flip the spiral carefully using two spatulas and fry the second side for another 1 to 2 minutes.

Lift the fritter with a slotted spider and drain thoroughly on paper towels.

Dust generously with icing sugar, top the centre with a spoonful of lingonberry jam, and serve immediately.

The grappa is not just for flavour; the alcohol prevents the batter from absorbing excess frying oil. Ensure the oil stays at 175 degrees C so the spirals puff rapidly without turning greasy. If using a funnel, hold your finger over the spout until you are positioned over the oil.

Storage
