Instructions

    Rinse the fragola grapes, remove all stems carefully, and pat them completely dry on a clean cloth.

    Whisk the eggs and caster sugar in a bowl until pale and slightly thickened.

    Pour in the melted butter and lukewarm milk, stirring gently to combine.

    Sift the plain flour, fioretto maize flour, baking powder, and fine salt into the wet mixture.

    Stir the batter with a wooden spoon until just combined into a thick, smooth dough.

    Fold the grated lemon zest and two-thirds of the grapes into the batter gently.

    Spread the mixture evenly into the prepared cake tin using a spatula.

Chef's tips

Drying the grapes thoroughly prevents the batter from turning soggy around the fruit. Fine maize flour (farina fioretto) gives the crumb its characteristic rustic bite, so do not use coarse polenta. The traditional grapes have seeds; authentic bakers leave them in, as they soften slightly and add authentic texture.
