Instructions

    Bring the whole milk, lemon peel, and a pinch of salt to a simmer in a saucepan over medium heat.

    Stir in the rice and cook gently for 20 minutes until tender and thick, stirring regularly.

    Add the sugar and ground almonds, stirring until completely dissolved and uniform.

    Remove the pan from the heat, discard the lemon peel, and allow the rice mixture to cool completely.

    Preheat the oven to 160°C (140°C fan) and grease the rectangular baking tin thoroughly with butter.

    Beat the eggs lightly and fold them into the cooled rice mixture along with the diced candied citron and almond extract.

    Pour the batter into the prepared tin, levelling the top with a spatula to roughly 3 cm thickness.
