Tip the flour onto a wooden board and make a well in the centre.

Pour the warm water and one tablespoon of olive oil into the well.

Mix gradually with a fork until a shaggy dough forms.

Knead the dough on the board for ten minutes until smooth, then cover and rest for thirty minutes.

Cut small pieces of dough and roll them with your palms into thick cords.

Place the sliced aglione garlic and remaining olive oil into a cold wide skillet.

Add the white wine and cook over very low heat, crushing the garlic gently until it melts.

Stir in the crushed tomatoes, chilli flakes, and salt, then simmer gently for twenty minutes.

Boil the umbrichelli in salted water for three to four minutes until tender with a firm bite.

Transfer the drained pasta directly into the skillet and toss over heat for one minute.
