Instructions

Stir the yeast and sugar into warm water. Leave it until it turns frothy.

Mix the two flours and salt together in a large bowl.

Add the yeast mixture and knead into a firm dough, slightly stiffer than for girda (a soft flatbread).

Cover the bowl. Let the dough rise for about 2 hours until it roughly doubles in size.

Press the dough down gently. Shape it into small, thick round discs.

Let the shaped dough rest for 20 minutes before baking.

Bake in a very hot tandoor (clay oven) or regular oven for 12-15 minutes until a thick golden crust forms.

Let it cool slightly before breaking open and serving.
