Instructions

Soak the mixed dried vegetables in warm water for at least 2-3 hours until soft.

Drain the water away and rinse the soaked vegetables gently.

Heat mustard oil in a pot. Add the asafoetida and dried red chillies to sizzle in the hot oil.

Add the turmeric and fennel powder. Stir briefly.

Add the soaked vegetables. Fry gently for a few minutes.

Pour in the water and salt. Cover and simmer for 20-25 minutes until the vegetables are tender and well blended.

Taste and adjust the seasoning. Simmer a little longer if you prefer a thicker gravy.

Serve hot with rice.

Soaking time depends on how dry the vegetables are, so check that they are tender before cooking. This dish has a naturally richer flavour than fresh vegetable curries.
