Instructions

Put the mutton ribs into a heavy pot. Add the milk, turmeric, fennel powder, dry ginger powder, cardamom, bay leaf and salt.

Pour in enough water to just cover the ribs. Bring the pot to a boil.

Lower the heat to a gentle simmer. Cook for about an hour until the ribs are tender and the liquid has mostly reduced.

Take the ribs out of the pot. Let them cool slightly and dry.

Heat the ghee (clarified butter) in a wide flat pan until it is hot.

Fry the ribs in batches. Cook until both sides are deep golden and crisp.

Drain the ribs on kitchen paper. Serve immediately while hot and crisp.

Simmer the ribs until they are almost falling-apart tender before frying. Fry right before serving so they stay crisp.
