Instructions

  1. 1

Peel the thin membrane off the back of each rack of ribs.

  2. 2

Rub the seasoning generously all over both sides. Let the ribs sit for 1 hour.

  3. 3

Smoke the ribs bone-side down at 225Β°F for about 3 hours.

  4. 4

Wrap the ribs in foil with a splash of vinegar. Continue cooking for 1.5 hours until tender.

  5. 5

Unwrap the ribs and brush them with barbecue sauce. Smoke uncovered for 30 minutes to set the glaze.

  6. 6

Let the ribs rest for 10 minutes. Slice between the bones.

Chef's tips

Lift the ribs with tongs; if the meat cracks slightly, they are done. Brush the sauce on only at the very end so it does not burn.

Storage

Refrigerate wrapped tightly up to 3 days.

Reheating

Reheat covered in a 300Β°F oven until warmed through.

Common mistakes to avoid

  • β€’Adding the sauce too early, which causes it to burn
  • β€’Leaving the back membrane on, making the meat tough to bite
