Instructions

Preheat the oven to 160°C (140°C fan).

Grease the inside of a deep casserole dish with half of the butter.

Arrange one-third of the sliced potatoes evenly across the bottom of the dish.

Scatter half of the chopped bacon and sliced onions over the potato base.

Season lightly with a pinch of thyme, salt, and white pepper.

Add another third of the potatoes, followed by the remaining bacon, onions, and herbs.

Arrange the remaining potatoes neatly in an overlapping layer on top.

Pour the hot stock gently around the sides without disturbing the top layer.

Dot the surface potatoes with the remaining butter.

Cover with a tight-fitting lid and bake for 90 minutes until tender.

Remove the lid and bake for 15 minutes more until golden on top.
