Instructions

  1. 1

Put the lingonberries, sugar, and water into a small saucepan.

  2. 2

Heat over medium heat until it gently bubbles. Stir every now and then.

  3. 3

Cook for 10-15 minutes. Stop when the berries pop and the sauce thickens slightly.

  4. 4

Stir in the orange zest during the last minute of cooking if you are using it.

  5. 5

Take the pan off the burner and let it cool. The sauce will get thicker as it cools.

  6. 6

Pour the sauce into a serving dish or jar.

Chef's tips

Lingonberries are very tart. Taste the sauce and add more sugar if you like, but keep a tangy edge to balance rich meats.

Storage

Refrigerate in a sealed jar for up to 3 weeks.

Reheating

Serve cold or gently warmed; no full reheating required.

Common mistakes to avoid

  • โ€ขAdding too much sugar and hiding the natural tart berry flavor.
  • โ€ขCooking the sauce too long until it becomes overly stiff.

Serving suggestions

Serve alongside roasted moose or caribou.Spoon over vanilla ice cream.
