Instructions

Shape the ground beef into 4 patties. Season them with salt and pepper, then set aside.

Melt 1 tablespoon of butter in a skillet over medium heat. Cook the onion until soft and golden, about 8 minutes, then set aside.

In the same skillet, cook the patties 3-4 minutes per side to desired doneness. Remove and keep warm.

Add the remaining butter to the skillet and whisk in the flour. Cook 2 minutes to make a roux (a thick cooked paste).

Slowly whisk in the beef stock and soy sauce. Simmer 5-6 minutes until thickened into gravy, then stir the cooked onion back in.

In a separate pan, fry the eggs sunny-side up.

Place a scoop of rice on each plate. Top each scoop with a burger patty, then a fried egg.

Ladle the hot gravy generously over the top. Garnish with green onion before serving.
Chef's tips
Fry the egg sunny-side up so the rich, runny yolk breaks over the patty and rice when you cut into it.
Storage
Store components separately; assembled loco moco does not keep well due to the egg and gravy.
Reheating
Reheat rice, patty and gravy separately in the microwave, then top with a freshly fried egg.
