Instructions

    Warm the milk and 50g of butter in a pan on the hob until just melted, then let cool to lukewarm.

    Whisk the flour, yeast, 50g caster sugar, and salt together in a large mixing bowl.

    Pour the warm milk mixture and beaten egg into the flour, stirring to form a soft, pliable dough.

    Knead the dough on a lightly floured surface for 10 minutes until smooth and elastic.

    Place into an oiled bowl, cover with a clean tea towel, and prove in a warm place for 1 hour.

    Knock back (gently punch down) the risen dough, then roll out onto a floured surface into a 30x20cm rectangle.

    Brush the dough with the remaining 25g melted butter, then scatter the brown sugar, mixed spice, and currants evenly over.

    Roll the dough up tightly from the long edge into a neat log.
