Instructions

Drain the soaked beans, cover with fresh water and simmer 40 minutes until the skins split when you blow on them.

Drain, keeping the cooking liquid.

Put the onion and half the pork in the crock, add the beans, then bury the rest of the pork on top.

Mix the syrup, molasses, mustard and seasoning with 700 ml of the bean liquid and pour over.

Cover and bake at 140C for 5 hours, topping up with bean liquid whenever the surface looks dry.

Uncover for the last 45 minutes to darken the top.

Check the liquid every hour โ beans that dry out in the oven stop softening and stay hard.
