Instructions

Fill a large stockpot with 2 inches of water and the salt. Bring it to a rolling boil.

Place a steaming rack inside the pot. Add the live lobsters.

Cover tightly with a lid. Steam for about 12-14 minutes for 1.5-pound lobsters, until the shells turn bright red.

Take the lobsters out of the pot. Let them rest for a few minutes.

Melt the butter gently in a small saucepan.

Crack open the lobster claws and tail. Serve with the melted butter and lemon wedges.
Chef's tips
Use a couple inches of well-salted water and steam rather than boil to keep the meat tender. Let the lobsters rest a few minutes off the heat to make the meat easier to remove.
Storage
Refrigerate leftover picked meat up to 2 days.
Reheating
Best eaten freshly steamed; reheat leftover meat gently in butter, not the microwave.
