Chhum Han

Instructions

Wash all the vegetables and greens thoroughly.

Line a steamer basket with a piece of banana leaf if you have one.

Place the squash and green beans into the steamer first. These take longer to cook.

Steam over boiling water for 8 minutes.

Place the pumpkin leaves, colocasia leaves and whole chillies on top.

Steam for another 8 to 10 minutes. Cook until all the vegetables are tender.

Take the vegetables out of the steamer. Sprinkle them with salt.

Toss gently to mix everything together. Serve warm.
Chef's tips
Place harder vegetables at the bottom of the steamer so everything cooks evenly. Do not overcook to keep the greens bright.

Best eaten fresh on the day of cooking.

Reheat briefly by re-steaming for 2 to 3 minutes.
