Instructions

Put the pork ribs and water into a heavy pot. Bring to a boil and scoop off any foam from the top.

Add the ginger, garlic and onion to the pot.

Turn down the heat. Simmer gently for 30 minutes until the pork is tender and smells fragrant.

Add the whole green chillies. Simmer for another 5 minutes.

Season the broth with salt and crushed black pepper.

Taste the soup and add more seasoning if you like.

Ladle the soup into bowls, sharing the pork evenly.
